Ingredients

  • 1 lb ground beef
  • 1 tbsp and 1 tsp taco seasoning
  • 3 tsp olive oil
  • 3 tsp and 2 tsp salt
  • 2 bell peppers
  • 1 yellow onion
  • 2 cups cooked rice
  • 1 head romaine lettuce, chopped
  • 2 avocados
  • 1 cup cooked corn
  • 1 cup black beans, cooked and drained
  • 1/2 cup salsa
  • Cilantro and lime, for garnish

Instructions

  1. In a large saucepan, brown the ground beef, stirring every 4 to 5 minutes, until it is fully cooked. Season with 1 tablespoon of taco seasoning and 3 teaspoons of salt, then set aside.
  2. Preheat the oven to 450°F. Chop the bell peppers and onion, then spread them on a baking sheet. Add the olive oil, remaining salt, and remaining taco seasoning. Toss to coat evenly and bake for 15 minutes, or until the vegetables are golden brown.
  3. Assemble the bowls with a few scoops of cooked rice, seasoned beef, roasted peppers and onions, corn, black beans, chopped romaine, sliced avocado, and salsa. Finish with cilantro and a squeeze of lime. Serve and enjoy.
