This Healthy Instant Pot Baked Ziti is one of those easy dinners that delivers all the cozy flavor of a baked pasta dish without requiring the oven. Technically, it is not baked unless you choose to finish it under the broiler, but it has the same saucy pasta, savory meat, tender vegetables, and melty cheese that make baked ziti so satisfying.

Another small note: the pasta shown here is penne rather than traditional ziti. Gluten-free ziti can be hard to find in some brands, and penne works beautifully because it has a similar tube shape and holds the sauce well. Use ziti if you have it, or use your favorite short gluten-free pasta.

  • This Instant Pot baked ziti has the comfort of baked pasta without the extra baking step.
  • Penne, ziti, or another short tubular pasta can be used, depending on what you have available.
  • The recipe uses crushed tomatoes with simple seasonings instead of jarred pasta sauce.
  • It includes lean protein, spinach, and cheese for a hearty, family-friendly dinner.

The best part about this healthy baked ziti recipe is how simple it is. The Instant Pot cooks the pasta, meat, and sauce together, so there is no need to boil noodles in a separate pot. Everything comes together in layers, and the result is a rich, saucy pasta dish that tastes like classic comfort food but fits easily into a balanced meal plan.

This recipe was tested several times using crushed tomatoes instead of premade pasta sauce. Crushed tomatoes are a pantry staple, and when combined with basil, oregano, garlic, onion, and a little salt, they make a flavorful sauce without needing a jar. This is especially helpful when no-sugar-added pasta sauce is not available or when you simply prefer to control the ingredients yourself.

One important tip for cooking tomato-based recipes in the Instant Pot is to layer the ingredients correctly. Tomato sauce is thicker than broth or water, so it can sometimes trigger a burn notice if it sits directly on the bottom of the pot. For this recipe, the meat goes in first, then water is used to deglaze the bottom, then the pasta is layered on top, and finally the seasoned crushed tomatoes are added without stirring.

Is this Instant Pot Baked Ziti gluten-free?

Yes. This recipe can be made gluten-free by using gluten-free pasta. Chickpea pasta works well because it adds protein and fiber, but brown rice pasta, corn-based pasta, or another gluten-free short pasta can also be used. Cooking time may vary slightly depending on the pasta brand, so follow the timing notes in the recipe.

Can this Healthy Instant Pot Baked Ziti be frozen?

Yes. Let the baked ziti cool completely, then transfer it to an airtight container. It can be frozen for up to three months. For best results, thaw it in the refrigerator before reheating. Add a splash of water or extra sauce if the pasta seems dry after storage.

Can I use ground beef or another protein?

Absolutely. Lean ground beef works very well in this recipe. Italian poultry sausage adds a lot of flavor, and ground turkey or ground chicken can also be used if that is what you prefer. Choose the protein that best fits your taste and meal plan.

Can I make this Instant Pot Baked Ziti vegetarian?

Yes. To make it vegetarian, leave out the meat and add extra vegetables. Squash and cauliflower are good options, and you can also use more spinach or another vegetable you enjoy. Keep the same layering method so the pasta cooks properly.

How can I make this recipe dairy-free?

For a dairy-free option, remove the portion you need before adding ricotta, Parmesan, Pecorino Romano, or mozzarella. The pasta, meat, vegetables, and tomato sauce are still flavorful on their own, making this an easy family meal when some people eat dairy and others do not.

Can I leave out the spinach?

Yes. If your family does not enjoy spinach, you can omit it. You may replace it with another vegetable, such as cauliflower rice, or simply make the recipe without the added greens. Spinach wilts quickly and blends into the pasta well, but it is flexible.

Ingredients

  • Olive oil cooking spray
  • 1 ¼ lb lean ground beef or Italian poultry sausage, removed from casing
  • ½ onion, diced
  • 2 teaspoons olive oil
  • 3 cloves garlic, minced
  • Himalayan salt, to taste
  • ½ cup water, used to scrape up any browned bits
  • 2 ¼ cups gluten-free pasta
  • 28 oz crushed tomatoes, 1 large can
  • 2 tablespoons fresh basil, or 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 2 cups chopped spinach
  • ¾ cup ricotta cheese, or low-fat cottage cheese
  • 1 cup freshly shredded or cubed mozzarella
  • ⅓ cup Pecorino Romano or high-quality Parmesan cheese

Instructions

  • Set the Instant Pot to sauté and coat the insert with olive oil cooking spray. Add the meat and cook until almost browned through. Add the diced onion and continue cooking until the onion begins to soften. Drain excess grease if needed, then add the olive oil and minced garlic. Stir until the garlic is fragrant, then season the mixture with salt.
  • Pour in the water and use a wooden spoon to scrape up any browned bits from the bottom of the pot. This step helps prevent a burn notice. Layer the uncooked pasta evenly over the meat mixture.
  • Stir the basil and oregano into the crushed tomatoes. Pour the seasoned tomatoes over the pasta in an even layer. Do not stir after adding the tomatoes.
  • Secure the lid and cook on Manual or Pressure Cook. If using chickpea pasta, cook for 3 minutes. If using regular gluten-free pasta such as brown rice or corn-based pasta, cook for 2 minutes.
  • When the cook time ends, do a quick release. Once the pressure has fully released, carefully open the lid. Stir the pasta, then add the chopped spinach and let it wilt for a moment. Stir in the ricotta and Pecorino Romano or Parmesan cheese. Top with mozzarella, then place the lid back on the Instant Pot briefly so the cheese melts.
  • For a browned, bubbly top, transfer the pasta to a broiler-safe dish, add the mozzarella, and broil for a few minutes while watching carefully.
  • Serve warm with extra Parmesan or Pecorino Romano, if desired.

Notes

21 Day Fix: 1 Yellow, 1 Red, 1 1/4 Green, 2/3 Blue, 1/3 TSP per serving. Add extra Pecorino Romano if desired to make it a full Blue.

Dairy-free option: Remove the dairy-free portion before stirring in the ricotta, Parmesan, Pecorino Romano, or mozzarella.
