Ingredients

2 sticks salted butter, softened at room temperature = 1 cup
3/4 cup light brown sugar, packed firmly when measuring
3/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour (do not sift)
1 teaspoon baking soda (make sure it is fresh; old baking soda can cause flat cookies)
1 teaspoon salt
1 package, 12 oz, semi-sweet chocolate chips

Directions


Preheat the oven to 350 degrees F. In one large bowl, cream the softened butter, light brown sugar, and granulated sugar together until the mixture is smooth and creamy. Add the eggs and vanilla extract, then mix again until everything is well blended and creamy.


Add the flour to the bowl, then place the salt and baking soda on top. Mix only until the dry ingredients are just incorporated. Do not over mix. Over mixing can make the dough tougher and may affect the final texture of the cookies. Add the chocolate chips last and gently fold them into the dough until they are evenly mixed in. Again, avoid over mixing once the chocolate chips have been added.


Drop heaping rounded tablespoons of cookie dough onto an ungreased cookie sheet, placing the dough about one inch apart. A medium cookie scoop works beautifully for this because it creates even portions and keeps the dough easy to handle.


Place the cookie sheet on the middle rack of the oven. Bake for 9 to 11 minutes, depending on your oven, until the cookies are lightly golden brown. Remove them from the oven and transfer the cookies to a cooling rack. This recipe makes about 3 1/2 dozen soft, thick chocolate chip cookies. Enjoy them warm, cooled, or with a cold glass of milk.
