Ingredients
  • 2/3 cup coconut flour
  • 2/3 cup unsweetened cocoa powder
  • 1/4 cup THM Baobab Boost Powder
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon THM Mineral Salt
  • 1/4 teaspoon xanthan gum
  • 6 eggs
  • 1 1/4 cups THM Gentle Sweet without xylitol
  • 1 teaspoon vanilla extract
  • 1 cup mayonnaise
  • 1 1/3 cups water
  • For the Frosting
  • Whipped chocolate ganache or your favorite THM-friendly chocolate frosting
Instructions
  1. Preheat the oven to 350 degrees. Grease two 8-inch round cake pans and set them aside. For easier removal, line the pans with parchment paper and lightly spray the parchment with coconut oil cooking spray.
For the Dry Ingredients:
  1. In a medium bowl, combine the coconut flour, cocoa powder, Baobab Boost Powder, baking soda, baking powder, mineral salt, and xanthan gum. Stir until the mixture is evenly blended. This dry mixture can also be stored and used later as a homemade cake mix.
For the Wet Ingredients:
  1. In a large bowl, beat the eggs, sweetener, and vanilla on high speed until the mixture is light and fluffy, about 3 minutes.
  2. Add the mayonnaise and beat on low speed until fully incorporated.
  3. Add the dry ingredients alternately with the water, beginning and ending with the dry ingredients. Mix until the batter is smooth and evenly combined.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake at 350 degrees for 33 to 35 minutes, or until a toothpick inserted in the center comes out clean.
