If you’re hunting for the best chocolate cake recipe, this is the one to try. Our “Perfect Chocolate Cake” is a treasured adaptation of a recipe shared years ago by a dear friend. It remains our most-requested cake from family and friends. The cake bakes up moist and dense, and the frosting is a rich, fudgy topping that complements the chocolate layers beautifully. Packed with flavor and simple to assemble, this cake makes a memorable dessert for birthdays, holidays, or any special occasion.

A light filling of whipped cream balances the dense chocolate and adds a fresh, airy contrast. You can build this cake with two or three layers; a three-layer version gives room for extra cream and looks especially elegant. The whipped cream keeps the cake from feeling overly heavy while letting the chocolate flavor shine.

Most requested cake

Over the years I’ve made a few helpful tweaks to streamline the process — small shortcuts that don’t compromise the flavor. Since my children became teenagers, this cake has been the one they ask for on their birthdays. It combines great texture and a classic chocolate taste but remains surprisingly simple to assemble and impressive on the table.

Secret #1: Cake shortcut

When time is tight, a quality cake mix works well with one small change: add sour cream. I often use a chocolate cake mix and stir in sour cream to deepen the flavor and improve the moistness. If you use a mix, be sure to follow the adapted ingredient amounts listed in the notes so the texture stays rich and tender. While some mixes can be convenient, skip canned frosting — use the frosting recipe below for the best results.

Secret #2: Make the frosting fast

For a quick, silky frosting, use a food processor. In under five minutes you can make a smooth, fudgy frosting by finely processing the chocolate then pouring in very hot melted butter and finishing with powdered sugar and cream. The heat from the butter helps the chocolate meld smoothly — be ready to finish and use the frosting quickly, as it sets up fast.

Secret #3: Add layers of frosting

My favorite assembly method is to spread a thin layer of fudge frosting on each cake round, then add whipped cream inside a frosting “dam.” I do this for the two inner layers but leave the top without the whipped layer. If you prefer a less sweet, more European-style cake, skip the extra thin frosting layers and use only the filling and a final coat. For those who love a richer dessert, the extra frosting between layers is heavenly.

Below you’ll find the full recipe with ingredient lists and step-by-step instructions so you can bake and assemble this cake with confidence. Tips for freezing layers, making chocolate curls, and the quick food-processor frosting method are included in the notes.

How to make chocolate curls

Chocolate curls are an attractive and simple garnish. Use a large milk chocolate bar at room temperature and a vegetable peeler. Press the peeler lightly into the bar and drag it down the side to form medium curls. Try broader strokes across the flat back of the bar for wide curls or scrape down a corner for narrow spirals. Mixing sizes and shapes creates an appealing top for the cake. If you have leftover frosting, pipe small swirls around the top edge before scattering the curls for a polished finish.

Refrigerate before serving

Chilling the assembled cake for at least an hour helps the frosting set firm, almost like a soft fudge shell. Use a long, sharp, thin-bladed knife and slice with a gentle sawing motion for clean pieces. Allow slices to sit a minute at room temperature if you prefer a softer bite, then serve.

Enjoy!

Ingredients

Cake

  • 1 cup unsifted unsweetened cocoa
  • 2 cups boiling water
  • 2 ¾ cups sifted flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup butter
  • 2 ½ cups sugar
  • 4 eggs
  • 1 ½ teaspoons vanilla

Frosting

  • 12 ounces semi-sweet chocolate chips
  • ¾ cup light cream (or half & half, cream, or milk)
  • 1 cup butter (2 squares)
  • 4 cups powdered sugar

Filling

  • 1 cup heavy cream, chilled
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla

Garnish

  • 1 large Hershey bar (milk chocolate, no nuts)

Instructions

Cake

  1. Preheat oven to 350°F. Cut parchment rounds to fit three 8- or 9-inch pans. Lightly grease pans and place parchment in the bottom.
  2. Combine cocoa with boiling water in a medium bowl and whisk until smooth. Cool completely and set aside.
  3. Sift together flour, baking soda, salt, and baking powder; set aside.
  4. In a large mixer bowl, beat butter, sugar, eggs, and vanilla about 5 minutes until light and fluffy.
  5. On low speed, alternate adding the flour mixture and the cooled cocoa liquid in small portions. Mix until combined; do not overmix.
  6. Divide batter evenly among the three pans and smooth the tops. Bake 25–30 minutes, or until the surface springs back when lightly pressed.
  7. Cool in pans 10 minutes, then loosen edges and invert onto cooling racks. Cool completely before assembling.

Frosting

  1. Combine chocolate chips, cream, and butter in a saucepan or double boiler over medium-low heat. Stir until smooth and remove from heat.
  2. Whisk in 2½ cups of powdered sugar until combined. If needed, gradually add the remaining powdered sugar until the frosting holds its shape.

Filling

  1. Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Refrigerate until ready to use.

To Assemble

  1. If cake layers are domed, level them with a knife. Place one layer on the serving platter, top side down.
  2. Pipe a thick ring of frosting around the outer edge of that layer to form a dam, then spread half of the whipped cream inside the dam.
  3. Place the second layer top side down and repeat: pipe a frosting dam and spread the remaining whipped cream.
  4. Top with the third layer, top side up.

To Frost and Finish

  1. Frost the sides first, then the top with the remaining frosting.
  2. Make chocolate curls from the Hershey bar with a vegetable peeler and cover the top with a mix of sizes and shapes.
  3. Refrigerate at least 1 hour before serving. Use a thin, sharp knife and a gentle sawing motion to cut neat slices.

Notes

Freezing the layers: For easiest frosting and a crumb-free finish, you can freeze the cooled cake rounds. Wrap each round tightly with plastic wrap and foil, then freeze until solid. Frozen layers are easier to crumb-coat and can be stored several days or weeks before final assembly.

Substituting a store-bought mix: If you prefer a mix, add sour cream to improve texture. Example adjustments: for a Triple Chocolate Fudge mix, try ½ cup sour cream, ¾ cup water, ½ cup vegetable oil, and 3 eggs. For a Devil’s Food mix, try ½ cup sour cream, 1 cup water, ⅓ cup vegetable oil, and 3 eggs. These changes help keep the cake moist and rich.

Quick food-processor frosting method

  1. Chop the chocolate chips in a food processor until they form a fine powder.
  2. Melt the butter until very hot and sizzling. With the processor running, pour the hot butter through the feed tube and process until smooth.
  3. Add powdered sugar a little at a time, and when the mixture begins to thicken, add the cream.
  4. Work quickly — the frosting firms up fast, so begin icing as soon as it’s ready.
