The days brighten, flowers begin to bloom, and my favorite sporting event arrives — the Kentucky Derby, the annual Run for the Roses. These Derby Sundaes with Chocolate-Bourbon Sauce are a festive and delicious way to celebrate the day.

In 2016 I finally checked off a lifelong wish: I visited Churchill Downs in Louisville, Kentucky. It was a sunny, perfect day and I enjoyed every minute with cousins, my nephew, and his then-fiancée. Walking the grounds brought back memories of my parents, who grew up nearby and watched the Derby every year. My love of the races is part of family tradition.

Next door to the racetrack is the Derby Museum, which houses a remarkable collection of memorabilia and immersive exhibits. Entering through the gates where the horses are loaded offers a humbling perspective — the thoroughbreds are huge and the jockeys, and visitors like me, seem quite small in comparison.

The museum’s highlight for me was an immersive film that places you in the heart of race day. You sit on swiveling stools in a circular theater surrounded by screens, and the film follows horses and jockeys through the day’s events. By the time the racing footage starts, the sound and imagery make you feel surrounded by thunderous hooves — it’s unforgettable.

Instead of the traditional Mint Julep cocktail, consider a playful twist: minty chocolate chip ice cream sundaes topped with a warm chocolate-bourbon sauce. They capture the spirit of the Derby in a dessert that’s easy to make and share.

The sauce I’m sharing is a homemade chocolate-bourbon sauce that can be prepared in advance. It’s rich, glossy, and so tempting you may find yourself spooning it straight from the bowl. If you prefer a shortcut, a store-bought fudge sauce stirred with a little bourbon works well. For a non-alcoholic version, simply use plain chocolate fudge sauce.

I don’t often reach for corn syrup, but for candy-style sauces it can be useful. A small amount of light corn syrup helps prevent sugar crystallization, keeping sauces and fudges silky and smooth. In this recipe it helps the chocolate-bourbon sauce achieve the right texture.

On the first Saturday in May, dress up, celebrate the pageantry, and serve these minty sundaes topped with warm chocolate-bourbon sauce. Don your favorite hat, gather friends or family, and enjoy the race day festivities — I’ll be cheering along with you.

  • Bourbon, salt, chocolate chip mint ice cream, and fresh mint for garnish

PRO Tip:

A small amount of corn syrup reduces the chance of crystallization in sugar syrups, so adding it to sauces, caramels, and fudge helps them stay smooth and glossy.

How to make Derby Sundaes with Chocolate-Bourbon Sauce:

  1. Combine the sugar, corn syrup, cocoa, and water in a medium saucepan. Stir over medium heat until the sugar dissolves and the mixture comes to a boil.
  2. Once boiling, lower the heat to medium-low and simmer until the mixture begins to thicken, about 10 to 12 minutes.
  3. Remove the pan from the heat and stir in the finely chopped dark chocolate, bourbon, and salt. Return the pan to low heat, whisking constantly, and simmer until the sauce is smooth and glossy, about 3 to 5 minutes more.
  4. Take the sauce off the heat and allow it to cool slightly; it will thicken as it cools. The sauce can be made up to a week ahead — once cooled, store in an airtight container in the refrigerator and rewarm gently before serving.
  5. Scoop mint chocolate chip ice cream into bowls, drizzle the warm sauce over each serving, garnish with a sprig of fresh mint, and serve immediately.

Notes

For those who are highly sensitive to gluten, distilled spirits such as bourbon are generally considered gluten-free. However, some individuals may react to certain additives or flavorings used by specific distillers. If you are preparing this for someone with severe gluten sensitivity or celiac disease, substitute potato vodka plus a touch of brown sugar, or use a plain chocolate sauce without alcohol.

  • 3 tablespoons unsweetened cocoa powder
  • 1 cup water

Ingredients

Chocolate Bourbon Sauce

  • 1/3 cup granulated sugar
  • 1/4 cup light corn syrup or golden syrup
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup water
  • 6 oz dark chocolate, chopped finely
  • 1/4 cup bourbon (optional)
  • 1/2 teaspoon kosher or fine sea salt

Sundaes

  • 1 gallon chocolate chip mint ice cream, store-bought or homemade
  • Fresh mint sprigs for garnishing

Instructions

  1. Make the Chocolate-Bourbon Sauce: In a heavy medium saucepan, combine the sugar, corn syrup, cocoa, and water. Bring to a boil over medium-high heat, stirring until the sugar dissolves. Reduce heat to medium-low and simmer until slightly thickened, about 10–12 minutes.
  2. Remove the pan from the heat and stir in the chopped chocolate, bourbon, and salt. Return to low heat and whisk until the sauce is smooth and glossy, about 3–5 minutes.
  3. Allow the sauce to cool slightly; it will thicken as it cools. Store cooled sauce in an airtight container in the refrigerator for up to a week; rewarm gently before serving.
  4. Assemble the Sundaes: Scoop ice cream into bowls, drizzle with warm chocolate-bourbon sauce, garnish with fresh mint, and serve right away.

Notes
