The spices in this recipe are pantry staples that are easy to source at most grocery stores: chili powder, cumin, paprika, garlic and onion powders, oregano, and a touch of cayenne or red pepper flakes if you like heat. Blending them at home results in a fresher, more balanced flavor than prepackaged mixes.

For uniformly small, restaurant-style crumbles, you can briefly pulse the cooked beef in a food processor. This step is optional but helps create a fine texture that fills the tortilla evenly and mimics the consistency you get at many taquerias.

Ingredients

  • 1 lb ground beef, cooked and drained

  • ¼ teaspoon cayenne (optional, for extra heat)
  • ½ teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup water
  • 10 corn tortillas, warmed
  • Fresh red salsa (store-bought or homemade)
  • 1 Roma tomato, chopped
  • 1 cup lettuce, chopped

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Drain excess fat.
  2. While the beef cooks, mix all the dry seasonings in a small bowl and set aside.
  3. If you prefer fine crumbles, briefly pulse the drained beef a few times in a food processor, taking care not to over-process.
  4. Return the beef to the skillet, add the seasoning blend, and stir to combine.
  5. Reduce heat to medium-low, add ½ cup water, and simmer for about 4 minutes or until the mixture is no longer watery and the flavors have melded. Remove from heat.
  6. Heat a clean skillet over medium heat and warm corn tortillas about 30 seconds per side, or wrap them in a damp towel and microwave briefly until pliable.
  7. Assemble tacos by spooning beef into warm tortillas and topping with fresh red salsa, chopped tomatoes, and lettuce. Serve with lime wedges and any additional garnishes you like.

Notes

If you’re short on time, substitute your favorite jarred red salsa for homemade salsa. Adjust cayenne and red pepper flakes to control spiciness. Leftover seasoned beef can be refrigerated for up to 3 days and makes a great filling for burritos, nachos, or taco bowls.
