Ingredients
- 2 cups thick plain yogurt
- 1/4 cup chopped hazelnuts
- 1/4 cup shelled pistachios
- 1/4 cup pomegranate seeds

Instructions
- Line a strainer or colander with a large piece of cheesecloth or a thin cotton towel. Place the strainer over a large bowl to catch the whey.
- Spoon the yogurt into the lined strainer. Gather the corners of the cloth and tie or secure them so the yogurt is enclosed and able to drain without falling through.
- Hang the bundle over a faucet or rest the strainer above the bowl. Let it drain at room temperature for about one hour, then transfer to the refrigerator and continue draining until the yogurt is thick and spreadable—about 6–8 hours or overnight.
- Unwrap the drained yogurt and transfer it to a serving dish. Smooth the surface with a butterknife.
- Top with chopped pistachios and hazelnuts and scatter pomegranate seeds over the surface. Drizzle with extra virgin olive oil.
- Chill briefly if desired, then serve with pita, bread, or toast for dipping.
