Vegan Sunshine Popsicles

These popsicles are bright, tangy, and perfect for hot weather. They’re vegan, made with whole fruit and a touch of maple syrup for sweetness. They freeze into a creamy, vibrant treat that tastes like a frozen slice of sunshine.

Ingredients

  • 2 1/2 cups frozen pineapple
  • 2 1/2 cups frozen peaches
  • Juice from 1/4 – 1/2 lemon, to taste
  • 2 tablespoons maple syrup
  • 1/4 teaspoon turmeric (optional, for color and a hint of warmth)
  • 1 – 1 1/2 cups water, adjusted for blending consistency

Instructions

  1. Place the frozen pineapple, frozen peaches, lemon juice, maple syrup, and turmeric (if using) in a high-speed blender. Do not add all the water at once.
  2. Start with about 1 cup of water and blend. The mixture will be very thick at first. Use a tamper or pause and stir to help the blades move through the frozen fruit.
  3. Taste and add more lemon or maple syrup if you want more tartness or sweetness. If the mixture is too thick to blend smoothly, add up to 1/2 cup more water, but avoid making it too thin — a thicker mixture freezes more evenly in molds.
