Description
These pumpkin spice protein pancakes are easy to make, light and fluffy, and full of warm fall flavor. They’re blended for a smooth batter and get their protein from plain Greek yogurt rather than powdered supplements. Serve them with sautéed apples and a drizzle of pure maple syrup for a comforting, nutritious breakfast.
Ingredients
- Sauteed apple topping
- 2 cooking apples, cored and chopped (firm varieties like Gala, Pink Lady, or Honeycrisp work well)
- 2 tablespoons butter
- 2 teaspoons ground cinnamon
- Optional: Pure maple syrup for drizzling
- Pancakes
- 1 1/2 cups gluten-free rolled oats
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 teaspoons pumpkin pie spice
- Pinch of salt
- 1/4 cup + 1 tablespoon pumpkin puree (not pumpkin pie filling)
- 3 eggs
- 1/2 cup plain Greek yogurt (any fat level; 2% was used here)
- 1/4 cup pure maple syrup
- 1 tablespoon coconut oil, melted
- 1 tablespoon milk (almond milk or any milk of choice)
- 2 tablespoons extra coconut oil for cooking (doesn’t need to be melted)
Instructions
- Prepare the apple topping: Heat a large skillet over medium-high heat. Add the butter, then the chopped apples. Cook, stirring occasionally, until the apples are fork-tender, about 8 minutes. Stir in the cinnamon, then transfer the apples to a serving dish and keep warm. If the apples finish before the pancakes, cover them with foil to retain heat.
- Make the pancake batter: Place the rolled oats, baking soda, baking powder, pumpkin pie spice, pinch of salt, pumpkin puree, eggs, Greek yogurt, maple syrup, melted coconut oil, and milk in a blender. Blend on high until mostly smooth, scraping the sides as needed. The batter should be pourable and fairly uniform in texture.
- Cook the pancakes: Heat a nonstick skillet or griddle over medium-low heat and melt about 1 tablespoon of coconut oil. Measure about 1/4 cup of batter for each pancake and pour onto the skillet, using a spatula to gently spread if needed. Depending on pan size, cook 2 to 4 pancakes at once. When the edges look set and the top shows small bubbles, about 4–5 minutes, flip and cook another 1–2 minutes until golden and cooked through. Transfer finished pancakes to a baking sheet in a warm oven (about 150°F / 65°C) while you finish the rest. This recipe yields about 8 pancakes.
- Serve: Stack the pancakes and spoon the sautéed apples over the top. Add a light drizzle of pure maple syrup if you like. Serve immediately with eggs or breakfast sausage for a complete meal.
Notes
Leftovers: Pancakes reheat well in a skillet or in the microwave. Store pancakes and apple topping separately to avoid sogginess. Reheat the apples gently on the stove or in the microwave.
Make-ahead tip: Double the batch and refrigerate or freeze extras for quick breakfasts during the week. Reheat and top with warmed apples for a fast, comforting meal.
Toppings and serving: Sauteed apples give these pancakes a cozy apple-pie feel, but fresh fruit, nut butter, or a plain drizzle of maple syrup all work nicely. Because the batter uses Greek yogurt for protein, these pancakes are a satisfying start to the day without relying on protein powders.
