This Cinnamon Bites Apple Cobbler combines a tender, juicy layer of Honeycrisp apple slices tossed in sugar and warm spices with a golden topping of bite-size cinnamon roll pieces. The result is an easy, crowd-pleasing dessert that tastes like apple pie and cinnamon buns had the most delicious baby.

Sweet, spiced apples on the bottom and warm, soft cinnamon bites on top make this cobbler irresistible. It’s perfect for holiday gatherings, potlucks, or a simple weekend dessert when you want something comforting without a lot of fuss. Because the cinnamon rolls are already prepared, the recipe comes together quickly and bakes into a bubbly, fragrant treat that’s easy to serve to a crowd.

A simple trick to make this dessert shareable is to cut the cinnamon rolls into halves and quarters before baking. Smaller pieces bake evenly and give everyone a chance to sample without grabbing a whole roll. Serve warm with a scoop of vanilla ice cream or a drizzle of extra icing for maximum delight.

About this recipe
This easy Cinnamon Bites Apple Cobbler starts with peeled, cored and sliced Honeycrisp apples tossed with sugar, a little flour, ground cinnamon and ginger, plus a splash of water. The apple layer bakes covered until tender and juicy. Then pieces of refrigerated cinnamon rolls are added on top and returned to the oven until the bites are golden brown. Finish with the included icing, a sprinkle of crystallized sugar and an extra pinch of cinnamon for a pretty, flavorful finish.
The recipe is intentionally simple: use store-bought refrigerated cinnamon rolls to save time while getting that classic cinnamon bun flavor. The apple filling can be customized with your favorite apple variety if Honeycrisp isn’t available, though Honeycrisp adds a juicy, crisp texture and bright flavor that pairs well with the sweet cinnamon topping.

Prep: 22 mins Cook: 1 hr 20 mins Total: 1 hr 42 mins Servings: 8
Ingredients
- 4 large Honeycrisp apples, peeled, cored and sliced
- 1 package (5 rolls) refrigerated cinnamon rolls with icing
- 1/2 cup granulated sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon, plus a pinch for topping
- 1/2 tsp ground ginger
- 1/3 cup water
- 1 tbsp crystallized sugar (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C).
- Place the apple slices in a pie or baking dish. Add the 1/2 cup sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/2 teaspoon ginger and 1/3 cup water. Toss with your hands or a spoon until the apple slices are evenly coated.
- Cover the dish with foil and bake for 50 minutes, until the apples are tender and bubbling.
- While the apples bake, open the package of cinnamon rolls and place them on a cutting board. Cut each roll into halves or quarters to create bite-size pieces. Set the included icing aside for later.
- Carefully remove the foil and arrange the cinnamon roll pieces evenly over the baked apples.
- Return the dish to the oven and bake an additional 25–30 minutes, until the cinnamon bites are golden and slightly browned on top.
- Remove from the oven and let cool on a rack. Once the cobbler has cooled slightly, drizzle the reserved icing over the cinnamon bites, sprinkle with crystallized sugar and add a pinch of cinnamon for extra aroma.
- Serve warm on its own or topped with a scoop of vanilla ice cream for a classic pairing.

Tips: For best results, use apples that hold their shape when baked—Honeycrisp is ideal, but Braeburn or Fuji also work. If you prefer a thicker filling, increase the flour to 3 tablespoons. To make the topping extra crisp, brush a little melted butter on the cinnamon bites before the final bake and sprinkle the crystallized sugar near the end.
