Ingredients
- 100g Jersey Royal new potatoes, scrubbed
- 1 bay leaf
- 50g broad beans, double podded
- 100g pancetta, chopped
- 4 spring onions, sliced
- 2 tbsp olive oil
- 1 duck breast, skin scored
- 1 tbsp honey
- 1 tsp chopped thyme
- Salt and freshly ground black pepper
- 1 tbsp Dijon mustard
- 2 tsp wholegrain mustard
- 1 tbsp crème fraîche
- 3 tbsp sherry vinegar
- 6 tbsp olive oil
- 1 tsp chopped thyme (extra)
- 1 garlic clove, crushed
- 8 cornichons, chopped
- 1 tbsp chopped parsley
- Salt and freshly ground black pepper (to taste)
Customise
- Swap broad beans for peas if you prefer a softer, sweeter bite.
- Use smoked bacon instead of pancetta for a smokier finish.
- Replace duck breast with seared salmon for a lighter dish.
- Use Greek yoghurt in place of crème fraîche to make the dressing tangier and lighter.

Method
- Start the potatoes: Put a large pan of salted water on to boil. Add the Jersey Royals and the bay leaf, then simmer for 10–15 minutes until the potatoes are tender when pierced with a knife. Leave them to cool briefly in the cooking water to keep the texture creamy and to prevent them from breaking up.
- Prep the salad base: Drain the potatoes, then roughly break them into pieces so they catch the dressing better. Place them in a bowl with the double-podded broad beans and set aside while you prepare the warm pancetta and spring onions.
- Cook the pancetta: Dry-fry or use a little olive oil in a frying pan over medium heat. Cook the pancetta until it is lightly golden. Add the spring onions and cook for another minute so they soften slightly but retain freshness. Spoon this hot mixture over the potatoes and broad beans — the warmth helps the flavours meld.
- Roast the duck: Heat the oven to 200°C (180°C fan)/Gas 6. Season the duck breast with salt and pepper and place it skin-side down in a cold ovenproof frying pan. Turn the heat on so the fat renders slowly and the skin crisps. Cook for 6–8 minutes, then flip the breast, brush the skin with honey and scatter over the chopped thyme. Transfer the pan to the oven and roast for about 8–10 minutes, depending on thickness. Let the duck rest before slicing to keep the juices sealed in.
- Mix the dressing: While the duck rests, whisk together the Dijon mustard, wholegrain mustard and crème fraîche. Add the sherry vinegar, olive oil, the extra thyme, crushed garlic, chopped cornichons and parsley. Season with salt and pepper and taste, adjusting acidity or richness as you prefer.
- Assemble and serve: Spoon the potatoes and broad beans onto plates, scatter over the warm pancetta and spring onions, then top with sliced duck. Drizzle the mustard dressing over everything so the warm potatoes soak up the sharp, savoury sauce. Serve immediately so the contrast of warm salad and tender, rested duck is at its best.
