Spaghetti carbonara with a simple twist: swap the bacon for savoury, golden halloumi to make a silky halloumi carbonara. This version keeps everything you love about carbonara — creamy, comforting, and quick — but makes it meat-free and budget-friendly. Perfect for a Meatless Monday or any night you want a satisfying pasta without fuss.
If you can make a basic carbonara, you can make this one. The technique is the same: get a good golden colour on the halloumi, cook the pasta to al dente, and finish the sauce off the heat so the eggs form a glossy, silky coating without scrambling. Ready in under 20 minutes and full of flavour.

Ingredients
Simple ingredients are all you need. This halloumi carbonara relies on good technique rather than complicated components.

Optional: a small sprinkle of finely chopped fresh parsley brightens the dish.
Step by step instructions
This pasta takes just under 20 minutes from start to finish. Follow these steps for best results.
Start by boiling the pasta. Always season the cooking water generously with salt before adding the pasta — this ensures the pasta itself is properly seasoned and the finished dish isn’t bland.

Use freshly grated parmesan (or pecorino) for the sauce. Pre-shredded cheese often contains anti-caking agents that can make the sauce grainy. Freshly grated cheese melts smoothly and delivers better texture and flavour.
This recipe is straightforward but requires attention to technique. The single most important step is to turn the heat off before you add the whisked egg and cheese mixture to the pasta — doing so creates the glossy, creamy sauce without curdling the egg. Also, fry the halloumi until golden brown to develop caramelised flavour — remember: colour = flavour.

To serve, heap on extra freshly grated parmesan and finish with a good crack of black pepper.
Tips & tricks to make this delicious
- Turn the heat off before adding the whisked egg and cheese mixture. This prevents the eggs from scrambling and helps form a silky sauce.
- Add reserved pasta cooking water to the pan. A splash of starchy cooking water cools the pan slightly and helps emulsify the sauce, making it glossy and creamy.
- Cook the pasta to al dente. Remove it slightly before the packet’s advised time; it will finish cooking as you toss it with the sauce.
- Use freshly grated parmesan or pecorino. It melts better and gives a smoother texture to the sauce.
- Pat the halloumi dry before frying. This reduces splatter and helps the cheese brown evenly.

Good to know
Yes, but it’s much better when pan-fried or grilled. Frying develops a crisp, golden exterior and enhances the flavour.
What cheese can be used in carbonara?
Traditional carbonara uses pecorino romano, which has a sharper, saltier profile because it’s made from sheep’s milk. Parmesan (parmigiano-reggiano) is milder and also works beautifully. Either will produce a delicious sauce.
What is carbonara sauce made of?
Classic carbonara is made from whisked eggs and freshly grated pecorino or parmesan, combined with a little pasta cooking water and fat (guanciale or pancetta traditionally, but olive oil works here). Proper technique — finishing the sauce off the heat — gives you a creamy texture without cream.

📖 Recipe
Halloumi carbonara
Ingredients
- 200 g / 7 oz dried spaghetti
- 150 g / 5 oz halloumi, cut into 1 cm (½ inch) cubes
- 1 egg
- ¼ cup freshly grated parmesan or pecorino romano
- 1 clove garlic (smashed, skin on)
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground black pepper
Instructions
- Cook the pasta according to packet instructions until al dente. Season the water well with salt.
- While the pasta cooks, whisk the egg and grated cheese together in a bowl and set aside.
- When the pasta has about 5 minutes left, heat a non-stick pan with olive oil. Add the halloumi and the smashed clove of garlic (skin on) and fry on medium heat.
- Allow the halloumi to brown on one side without moving it, about 3–4 minutes, then flip to brown the other side. Remove and discard the garlic.
- Drain the pasta, reserving ⅓–½ cup of the cooking water. Add the pasta to the pan with the halloumi, pour in the reserved water, and season generously with black pepper. Toss together and then turn the heat off.
- With the pan off the heat and no sizzling, slowly pour the egg and cheese mixture over the pasta while tossing quickly to coat. The residual heat will thicken the sauce into a glossy, creamy coating.
- Serve immediately with extra grated cheese and more black pepper.
Notes
Cook pasta to al dente: Remove the pasta a couple of minutes before the packet time so it retains a slight bite; it will finish cooking when mixed with the sauce.
Smash the garlic: Use the flat side of a knife or the heel of your hand. The garlic is used to flavour the oil and is discarded before serving — no garlic bits in the final dish.
Halloumi can spit: Pat it dry before frying to reduce splatter. The salty brine can cause some popping in the pan.
No extra salt needed: The halloumi and cheese are salty, so additional salt beyond the pasta water is usually unnecessary. Adjust to taste.
Leftovers: Best eaten the same day. Reheating may alter the sauce texture.
