Get through warm days with these delicious Strawberry Oat Milk Popsicles. They’re made from simple, whole ingredients you probably already have in your pantry — no store-bought oat milk required.

Oat milk has surged in popularity for good reasons: it’s allergy-friendly for many people, has a mild pleasant flavor, and oats are an affordable pantry staple. For these popsicles you simply make a quick oat “milk” by blending oats with water, then add fruit and a touch of sweetener before freezing. It’s fast, forgiving, and perfect for summertime.

These popsicles are wonderfully simple to make. Begin by blending rolled oats with water, let the mixture rest to soften, then blend again until smooth. Add frozen strawberries (or another frozen fruit), agave or another liquid sweetener, lemon juice, vanilla and a pinch of salt, blend until creamy, pour into molds and freeze. If you want to make a quick, kid-friendly version, pour the mixture into ice cube trays and insert toothpicks once partially set.

Though this recipe highlights strawberries, you can easily swap in other frozen fruits. Peaches, blueberries, cherries or pineapple work well — just taste as you go and adjust the sweetener, since fruit sweetness varies. If using fresh fruit instead of frozen, be mindful that the mixture will be warmer and may take longer to freeze.

Substitutions/Suggestions:
- Rolled oats – Rolled oats give the best texture and creaminess. Quick-cooking oats can work in a pinch; start with a slightly smaller amount (about 3/4 cup) to avoid an overly thick base.
- Frozen strawberries – Frozen fruit helps chill the mixture and speeds up freezing. Fresh fruit will work but may require a longer freeze time.
- Agave nectar – Use maple syrup or another liquid sweetener if you prefer. Avoid granulated sugar since it won’t dissolve in an uncooked mixture.
- Lemon juice – Lime or orange juice are fine alternatives; adjust to taste. For a brighter strawberry-lemon flavor, add 1–2 teaspoons of lemon zest.
- Vanilla extract and salt – These enhance flavor; if you have a vanilla bean, scraping half a bean into the blender is a lovely upgrade.

Strawberry Oat Milk Popsicles
These popsicles are creamy, mildly sweet, and made from pantry staples: oats, water, berries and a little sweetener. They’re vegan, simple to prepare, and customizable with whatever frozen fruit you have on hand.

Ingredients
- 1 cup (92 g) gluten-free rolled oats
- 1 cup (235 ml) water
- 1 cup (139 g) frozen strawberries, plus extra for slicing
- 4–5 tablespoons (60–75 ml) agave nectar, to taste
- 1 tablespoon (15 ml) lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Place the oats and water in a blender and puree for about 30 seconds. Let the mixture sit 3–5 minutes so the oats soften, then blend for another 60 seconds until smooth.
- Add the frozen strawberries, agave, lemon juice, vanilla, and salt. Puree until the mixture is smooth and creamy. Thinly slice 2–3 of the extra strawberries for decorating the molds if desired.
- Press the strawberry slices against the inside walls of six 3-ounce popsicle molds so they stick, then pour the popsicle base into the molds. Tap the molds gently to release air bubbles, insert sticks, and transfer to the freezer.
- Freeze for at least 4–5 hours, depending on your freezer and the temperature of the mixture. To unmold, run the molds under warm water for 15–30 seconds and gently pull the popsicles free. Enjoy.
