  2. 1 head romaine lettuce, sliced into thin, bite-sized strips
  3. 1 cup kalamata olives, halved
  4. 1 avocado, thinly sliced

  6. 1/2 cucumber, thinly sliced
  7. 1 cup cherry tomatoes, halved
  8. Fresh mint leaves, to taste
For the Greek Dressing (adapted from a classic vinaigrette)
  1. 2 cloves garlic, minced
  2. 1 teaspoon dried oregano
  3. 1/2 teaspoon Dijon mustard
  4. 1/4 cup red wine vinegar
  5. 1 teaspoon kosher salt
  6. 1/2 teaspoon freshly ground black pepper
  7. 1/2 cup good olive oil
Instructions
  1. Prepare the pan-roasted chicken thighs according to your preferred method. The thighs should be well seasoned, the skin rendered and crisped, and the meat cooked through.
