- 1/2 inch fresh ginger
- 2 cloves garlic
- 3 green onions
- 6 oz green beans
- 1/2 Persian cucumber
- 1 radish
- 3 oz California prunes
- 2 cooked chicken breasts
- 1 lime
- 1 1/2 tsp seasoned rice vinegar
- 1 tbsp teriyaki sauce
- 1/2 tsp tamari sauce
- 3 tsp toasted sesame seeds
- 1 1/2 tsp sesame oil
- 1/4 tsp red pepper flakes
- 1 head butter lettuce
- Prep aromatics and vegetables: peel and finely chop the ginger; thinly slice garlic and green onions. Trim the green beans. Cut the radish and half the cucumber into thin matchsticks.
- Chop the prunes into 1/4-inch dice and place in a medium bowl. Shred the cooked chicken into bite-sized pieces and add to the bowl with the prunes. Cut the lime in half.
- In a small bowl, whisk together rice wine vinegar, teriyaki sauce, tamari, the juice from half the lime, and 1 1/2 tsp toasted sesame seeds.
- Heat 1 tsp sesame oil in a medium sauté pan over medium-high heat. Add half the green onions and half the ginger; sauté for about 1 minute until fragrant.
- Add the prunes and shredded chicken to the pan and cook 2 minutes. Pour in the teriyaki-tamari mixture and sauté until most of the liquid has evaporated. Remove from heat and set aside.
- Wipe the pan clean, return to medium-high heat, and add remaining 1/2 tsp sesame oil. When hot, add the green beans with a pinch of salt. Cook for 2 minutes, stirring frequently so beans cook evenly.
- Add the remaining ginger and 1 tablespoon water; cook 2 more minutes. Stir in garlic and red pepper flakes and cook 1 minute more, until beans are crisp-tender. Mix in the remaining sesame seeds and remove from heat.
- Separate the lettuce leaves, keeping them whole for wrapping. Divide leaves between plates and spoon the chicken and prune filling into each leaf. Garnish with cucumber matchsticks, radish, and remaining green onions. Serve with sesame green beans on the side.
