This Blackstone Cajun Fried Rice is a flavorful griddle recipe with just the right spicy kick. It brings together the bold, smoky flavors you might expect from jambalaya and combines them with the sizzling, savory style of hibachi fried rice.
Cooking on a Blackstone griddle or flat top grill makes this dish especially fun because everything cooks quickly in one large space. The rice gets a little crisp, the chicken cooks alongside the vegetables, and the andouille sausage adds a smoky Cajun flavor that ties the whole meal together.
This is a simple version of Cajun fried rice, but it is easy to customize. If you enjoy classic jambalaya ingredients, you could add shrimp, bell peppers, or any other favorite mix-ins. The basic recipe keeps things easy while still delivering plenty of flavor for a satisfying griddle dinner.

How to Make Blackstone Cajun Fried Rice
Start by preparing all of your ingredients before heading out to the griddle. Having everything chopped, measured, and ready on a tray makes the cooking process much smoother. Fried rice moves quickly once it hits the hot surface, so it helps to have the chicken, sausage, vegetables, rice, seasonings, and sauces ready to go.
For this recipe, you will need diced chicken and smoked andouille sausage, along with diced onion, garlic, and fresh corn kernels. The rice should be cooked and cooled ahead of time. Jasmine rice works well because it has a great texture and holds up nicely on the griddle.
You will also need soy sauce, butter, eggs, Cajun seasoning, and a cooking oil of your choice. Olive oil works well, but you can use your preferred griddle oil.

Preheat the Blackstone griddle over medium-high heat for a few minutes. Once it is hot, add a light layer of cooking oil. Place the cooked rice on one side of the griddle and crack the eggs directly over the rice. Use your spatulas to mix the eggs into the rice as they cook.
On the other side of the griddle, add the onion, corn, chicken, and part of the Cajun seasoning. Keeping the rice and the chicken mixture separate at first allows the chicken and vegetables to cook properly while the rice begins to fry with the eggs.

Cook both sides for about 4 to 5 minutes, stirring and flipping as needed. The chicken should begin to brown, the vegetables should soften, and the rice should start to pick up texture from the griddle.

Next, combine everything together using hibachi spatulas. Add the remaining Cajun seasoning, diced andouille sausage, butter, garlic, and soy sauce. Toss everything well so the rice is evenly coated and the flavors are spread throughout the whole dish.

Continue cooking for another 6 to 8 minutes. If you like fried rice with a crispier texture, spread the rice out flat and press it down against the griddle for a short time before tossing again. This helps create those browned, slightly crunchy bits that make griddle fried rice so good.

Blackstone Cajun Fried Rice Is Great with Tabasco Sauce and Yum Yum Sauce
This Cajun chicken and sausage fried rice is delicious right off the griddle, but serving it with sauces makes it even better. Tabasco sauce adds extra heat and fits the Cajun-inspired flavor of the dish. Yum yum sauce brings a creamy, slightly sweet contrast that works perfectly with hibachi-style fried rice.

A store-bought yum yum sauce keeps the meal simple and easy. This is the kind of casual dinner that is perfect for eating outside on the patio, especially when the griddle is already hot and the whole meal comes together in one place.

The finished dish is hearty enough to serve as a main course and makes a generous batch. It is packed with chicken, sausage, rice, vegetables, and bold seasoning, making it a great griddle recipe for family dinners or casual gatherings.
