These cookies are adapted from a spiced apple cookie base with the addition of a simple cheesecake filling. I enjoy them both with and without the filling, but the cream cheese heart truly elevates the cookie to something special. They’re wonderful right from the oven, with a warm cheesecake center, but if you have patience, chilling them overnight in the refrigerator improves the flavor—letting the spices and apple meld with the dough.

Ingredients

Cookies

  • 200 g Butter, softened (1 Cup)
  • ½ Cup Brown Sugar
  • ⅓ Cup Dark Brown Sugar
  • ¼ Cup Sugar
  • 1 Tbsp Maple Syrup
  • 2 Large Eggs
  • 1 Tbsp Vanilla Extract
  • 1½ Cups All Purpose Flour
  • 1 tsp Baking Soda
  • 2 Cups Quick Oats
  • 1½–2 tsp Cinnamon (adjust to taste)
  • 1 Apple, peeled and diced into small cubes

Cheesecake Filling

  • 125 g Cream Cheese, softened
  • ¼ Cup Icing Sugar
  • ½ tsp Vanilla Extract

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with baking paper.
  2. In a large bowl, beat the softened butter with the brown sugar, dark brown sugar, granulated sugar, and maple syrup until smooth and creamy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Gradually add the flour, baking soda, and cinnamon, mixing until combined.
  5. Fold in the quick oats and the diced apple pieces. Set the cookie dough aside.

Cheesecake Filling

  1. Beat the cream cheese with the icing sugar and vanilla extract until smooth and lump-free.
  2. Take a small portion of cookie dough and flatten it in the palm of your hand. Add about one teaspoon of the cheesecake filling in the center. Top with another flattened piece of dough and seal the edges to form a ball.
  3. Place the filled dough balls on the prepared baking sheet, spacing them a few centimeters apart. Bake for 12–15 minutes, until lightly golden at the edges.
  4. The cookies will be soft when removed from the oven and will firm up slightly as they cool. Allow them to cool completely on a wire rack before serving.
  5. If you prefer a more settled, melded flavor, refrigerate the cookies overnight—the spices and apple will develop deeper flavor that way.
