Ingredients
- 4 large sweet potatoes (peeled and cut into half-moon shapes)
- 3 tbsp vegan sour cream
- 3 tbsp vegan butter (such as Earth Balance)
- 4 tbsp canned coconut milk, plus extra to garnish (see notes)
- 2 thyme stems, leaves removed, plus extra for garnish
- Salt and freshly ground black pepper, to taste
Instructions
- Rinse and peel the sweet potatoes, then cut them into even half-moon slices so they cook uniformly.
- Place the potatoes in a large pot and cover completely with cold water. Bring to a boil over high heat, then reduce to a gentle simmer and cook until a knife slides into the potatoes easily (knife-tender).
- Drain the potatoes thoroughly in a colander. Removing as much water as possible is essential to avoid a watery mash.
- Return the drained potatoes to the original pot. If any excess water remains, wipe the pot dry with a clean towel or paper towel.
- Add the vegan butter, vegan sour cream, canned coconut milk and the thyme leaves to the pot with the potatoes.
- Using a stand mixer with the whip attachment, a hand mixer, or a potato masher, whip the potatoes until smooth and creamy. For the silkiest texture, a mixer works best; a masher is fine when you prefer a more rustic result.
- Taste and adjust seasoning with salt and pepper. If you want a thinner consistency, add a little more coconut milk, a teaspoon at a time, until you reach the desired creaminess.
- To serve, drizzle a little extra coconut milk over the top and sprinkle with additional fresh thyme leaves for an attractive finish.
Notes
1. Use canned coconut milk, not the thin carton beverage. The canned version contains solids that add real creaminess; stir the can well to combine the liquid and solids before measuring.
2. Removing thyme leaves is quick and easy: hold the top of the stem with one hand and run the other hand down the stem to strip the leaves off.
3. For the smoothest results, a stand mixer with the whisk or paddle attachment gives an extremely creamy texture. A hand mixer is a good compromise; a traditional potato masher produces a chunkier, rustic mash.
4. Make-ahead tip: You can peel and cut the potatoes and store them submerged in cold water in the fridge for up to 48 hours. When you’re ready, drain and cook as directed. After cooking, keep the potatoes in the pot and rewarm the vegan butter, coconut milk and sour cream until warm and combined before mashing — this helps everything blend smoothly and ensures the potatoes stay hot when served.
Storage & Reheating
Leftovers keep well in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop over low heat or in a microwave, stirring occasionally and adding a splash of canned coconut milk if the mash seems dry. Heat just until warmed through to preserve creaminess.
Substitutions & Variations
If you prefer a milder coconut flavor, reduce the coconut milk slightly and increase the vegan sour cream. For a savory herb variation, fold in chopped chives or parsley instead of thyme. You can also combine orange- and purple-fleshed sweet potatoes for color contrast.
