The result was better than expected. The pork crackling strips were crisp, light, and full of flavour without being overpowering. They were crunchy but not painfully hard, salty but easy to adjust to taste, and not greasy because most of the fat had rendered into the tray below.

Once cooked, they needed only an extra sprinkle of salt before serving. That final seasoning makes a big difference, especially if you enjoy a bold, savoury keto snack. They are best eaten fresh, while still crisp and warm, although they can also be cooled before serving.
