For a subtle smoky finish we used Bourbon-flavored wood pellets on our pellet grill to give the loin a light “kiss of smoke.”

We reserve one night a week just for us—date night—when we cook something special, often on our wood pellet grill or smoker. Some evenings we cook indoors and still enjoy the meal outside on our patio, surrounded by a relaxed, rainforest-inspired setting with soft lighting, candles, and music. A little wine or a strawberry margarita, good food, and sometimes a dance make the experience memorable.
