How to make Grilled Homemade Italian Meatballs

My meatball method relies on simple, traditional techniques for tender, well-seasoned meatballs. Soak the panko in milk, combine gently with the meats and other ingredients, chill to firm up the mixture, form into balls, then brown on the grill and finish with indirect heat until cooked through.

Start by soaking the panko breadcrumbs in milk for a few minutes so they soften. In a large bowl, mix the soaked breadcrumbs with both meats, minced onion, lightly beaten eggs, grated Parmesan, chopped parsley and basil, minced garlic, kosher salt, black pepper, crushed red pepper flakes and dried oregano. Combine gently—overworking will make the meatballs dense.

Place the bowl covered in the refrigerator for about an hour. Chilling helps the mixture hold together and allows the flavors to meld. When ready, wet your hands and form the mixture into 18 even meatballs. These are slightly larger than typical but are sized to fit three per hoagie roll if you’re making subs.

Can these meatballs be made ahead of time?

Yes. You can mix the meatball mixture and refrigerate it up to 24 hours before forming and cooking. Formed, uncooked meatballs can also be refrigerated briefly or frozen for longer storage.

Preheat your grill for two-zone cooking: one side direct medium heat and the other side indirect for finishing. Oil the grates well and place the raw meatballs over the direct heat. Allow each side to sear for about 1–2 minutes until the meatball releases from the grate and develops a crust, then rotate until all sides are browned.

After browning, move the meatballs to the cooler side of the grill, close the lid, and cook indirectly for about 15–20 minutes or until the internal temperature reaches 165°F (74°C). Both charcoal and gas grills work well; the direct-to-indirect method creates that desirable caramelized exterior while gently finishing the interior.

Do these meatballs have to be cooked on the barbecue grill?

No. You can brown the meatballs in a skillet on the stovetop, then transfer the skillet to a preheated 400°F (200°C) oven to finish for about 10 minutes, or until they reach 165°F internally.

To make meatball subs on the grill: lightly toast 6 sub rolls over the coals, add three cooked meatballs per roll, spoon over warmed red sauce or marinara, top with slices of mozzarella or provolone, close the lid and heat on indirect until the cheese melts, about 4–6 minutes.

Ingredients

  • 1 pound ground pork (85/15)
  • 3/4 cup panko bread crumbs
  • 1/2 cup milk
  • 1 cup onion, minced
  • 2 eggs, lightly beaten
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup fresh Italian parsley, chopped
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh basil, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano

Instructions

  1. Soak the panko in the milk for 5–10 minutes until softened.
  2. In a large bowl, combine the soaked breadcrumbs and milk with the ground beef and pork, minced onion, eggs, Parmesan, parsley, garlic, basil, salt, pepper, red pepper flakes and oregano.
  3. Gently mix with your hands until just combined. Avoid overworking the meat.

  5. With wet hands, form the mixture into 18 equal meatballs and place them on a greased sheet or tray.
  6. Preheat the grill for two-zone cooking: one side over medium direct heat, the other side reserved for indirect heat.
  7. Oil the grate and place the meatballs over the direct heat. Brown on each side 1–2 minutes until they release from the grate and develop a crust.
  8. Transfer the browned meatballs to the indirect side, close the lid, and continue cooking for 15–20 minutes or until an instant-read thermometer registers 165°F (74°C) at the center.
  9. Remove and rest a few minutes before serving. For subs, place three meatballs in each toasted roll, spoon with sauce, add cheese, and heat on indirect until the cheese melts.
