Ingredients

For the Base:

  • 1 box miniature Nilla Wafer cookies
  • 16 oz miniature marshmallows (1 package)
  • 1/2 cup (1 stick) unsalted butter, cut into cubes

For the Caramel Layer:

  • 1/2 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 14 oz (1 can) sweetened condensed milk

For the Chocolate Layer:

  • 2 cups milk chocolate chips (about one standard package)

Instructions

  1. Line a 9×13-inch pan with foil or parchment paper, leaving an overhang for easy removal. Lightly spray the foil or parchment with cooking spray.
  2. In a large microwave-safe bowl, combine the cubed butter and the miniature marshmallows. Microwave on high for about 2 minutes, stirring every 30 seconds, until the butter is melted and the marshmallows are smooth and cohesive. If it finishes sooner, stop microwaving.
  3. Stir the miniature Nilla Wafers into the melted marshmallow mixture until all the cookies are coated. Press this mixture evenly into the prepared pan, compacting it so the layer is smooth. Refrigerate for at least 30 minutes.
  4. Make the caramel: in a medium saucepan over medium-low heat, melt the 1/2 cup butter with the brown sugar, stirring until the sugar dissolves. Add the corn syrup and sweetened condensed milk and stir to combine. Bring the mixture to a boil, then continue boiling gently while stirring constantly for 5 minutes. The caramel will thicken and turn a golden color. Remove from heat and beat with a spoon for another 1–2 minutes to thicken slightly.
  5. Pour the warm caramel over the chilled cookie base and spread into an even layer. Refrigerate for at least one hour to let the caramel set.
  6. For the chocolate layer: place the milk chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and glossy. Pour the melted chocolate over the caramel layer and spread evenly. Chill for at least one hour or until the chocolate is firm.
  7. Use the foil or parchment overhang to lift the slab from the pan. Cut into bars. They slice more cleanly when cold, but can be served at room temperature if preferred. Store in the refrigerator for best results.
