What’s the difference between loin chops and lamb chops?

Lamb loin chops come from the saddle just behind the rib area and resemble small steaks. They are compact and meaty with a mild, slightly gamey flavor and are available bone-in or boneless. Bone-in loin chops have extra flavor but need slightly longer cooking time.

Rib chops (often called lamb chops) are cut from the rib section and usually sold as a rack. These are commonly frenched—trimmed to show the bone—for an elegant presentation and are typically more tender and fatty than loin chops.

How to make pan-seared lamb loin chops

Step 1: Remove the loin chops from the refrigerator about 30 minutes before cooking so they come to room temperature. Pat them dry with paper towels; a dry surface sears more effectively.

Step 2: In a mortar and pestle, mash garlic with salt, pepper and oregano until you form a paste. This concentrated paste becomes the marinade.

Step 3: Rub olive oil over the chops, then massage the garlic-herb paste onto all sides. For deeper flavor, marinate up to 30 minutes at room temperature or overnight in the refrigerator.

Step 4: Heat one tablespoon of olive oil in a cast-iron skillet or heavy pan over medium-high heat until shimmering. Add the chops and sear without moving them until browned, about 4–5 minutes per side. Because loin chops are triangular, sear the thicker edges as well—about 2–3 minutes—so all faces are evenly browned.

Step 5: Transfer the chops to a plate and loosely tent with foil. Let them rest 10 minutes so the juices redistribute. Finish with a squeeze of fresh lemon and a sprinkle of fresh thyme or oregano before serving.

Lamb cooking temperatures

Use a thermometer to check internal temperature for your preferred doneness:

  • Rare: 115–120°F
  • Medium-rare: 120–125°F
  • Medium: 130–135°F
  • Medium-well: 140–145°F
  • Well done: 150–155°F

Remember: the lamb will rise a few degrees while resting. Pull the chops off the heat about 5°F below your target temperature and let them rest for best results.
