If it’s too wet, add the extra tablespoon of flour; too dry, add a teaspoon of egg white.

Allow the mixture to rest for 10 minutes while you preheat the oven to 170°C (340°F) and line two baking trays with parchment or silicone baking mats. After resting, use a 1 tbsp measure or small scoop to portion the dough into rounds about an inch apart. Shape each portion into a flat-bottomed dome.

Instructions

  1. Place the egg whites, sugar, vanilla and salt in a large bowl and whisk until light and frothy, about 30–45 seconds. The mixture should thicken slightly but not form meringue.
  2. Add the desiccated coconut and 1 tbsp flour. Gently fold until combined. Test the mixture by pressing some together; it should hold its shape. If it’s too wet, add the extra tablespoon of flour.
  3. Leave the mixture to rest for 10 minutes while you preheat the oven to 170°C (340°F) and line two baking trays.
  4. Portion the mixture using a 1 tbsp scoop or spoon. Press each portion into a flat-bottomed mound with a rounded top and place them about 1 inch apart on the trays.
  5. Bake for 10–12 minutes until golden all over. They should feel slightly firm and springy. Remove from the oven and cool completely on a wire rack.
  6. If using chocolate, melt it gently in short microwave bursts or over a bain-marie until smooth. Dip the base of each cooled macaroon into the chocolate and return to the rack to set (20–30 minutes).
