- 125g (2/3 cup) caster/superfine sugar
- 2 tbsp golden syrup (corn syrup in the US)
- 1 tsp vanilla extract
- Pinch of salt
Chocolate topping
- 150g (5.3 oz) white chocolate

- 20cm (8″) square baking tin
- Large microwavable bowl
- Rubber spatula

Step-by-step—red velvet brownie
Line a square tin with baking paper and preheat the oven to 180ºC (fan 170ºC / 356ºF). Melt the butter in a large microwavable bowl in short intervals. Beat in the sugar and cocoa for at least a minute, then add the egg, yolk, vanilla and food colouring. Fold in the flour and salt, then gently stir through the vinegar. Caramel
Combine the condensed milk, butter, sugar, golden syrup, vanilla and a pinch of salt in a medium saucepan. Stir constantly over low–medium heat until fully melted, then bring to the boil and simmer, stirring into the pan edges, until it reaches about 107ºC/225ºF and turns a light golden brown. Remove from heat, stir for a couple of minutes, then pour over the cooled brownie and smooth the surface. Cool at room temperature until the caramel firms.

Chocolate topping
Break the white chocolate into a microwavable bowl and heat in 10-second bursts, stirring each time. When about two-thirds melted, stop microwaving and stir until the chocolate is smooth. Pour over the caramel and smooth with a spatula. Let the chocolate set completely at room temperature, then remove from the tin and slice into 16 bars.
